balsamic vinager adds a flair to healthy cooking. A gourmet kitchen without balsamico vinegar is hard to imagine. Less than 20 years ago, balsamic vinegar was nearly an unknown Italian condiment. Now, gourmet chefs use it more and more. A couple drops of the very best balsamic vinegar on ripe berries, pears, or other fruit is the traditional combination to end a meal.
